Whole Wheat Bread (Stone Ground Flour)

Prep Time:

5 minutes
5 minutes rest
5 minutes knead
40 minutes rise
5 minutes shaping
40 minutes rise
35 minutes baking

Makes: 1 Loaf

Ingredients

1 1/4 cup water

1 1/2 teaspoon salt

2 Tablespoons molasses, honey, or sugar

1/3 cup oil

3/4 cup potato flakes or 1/3 cup potato powder

3 cups whole wheat flour

3 teaspoon quick-rise instant yeast

Preparation

Step 1

  • Mix everything together. Let set 5 minutes.

Step 2

  • Knead in bowl about 4 minutes. If needed, add a little more flour.

Step 3

  • Let raise 40 minutes in cold oven with the light on

Step 4

  • Shape the dough into a loaf and place in a greased pan. Slit top of loaf.

Step 5

  • Let loaf rise about 40 minutes.

Step 6

  • Heat oven to 375 degrees Fahrenheit. Bake for 35 minutes.
