Whole Wheat Banana Muffins (Stone Ground Flour)

1 1/2 cups Whole Wheat flour

1 1/2 teaspoons baking soda

1/4 teaspoon salt (pink Himalayan)

1/4 teaspoon allspice

3/4 teaspoon cinnamon


1/3 cup oil

3/4 cup coconut palm sugar

2 eggs


3 bananas (mashed)


Optional:

1/2 cup chocolate chips

1/2 cup walnuts


Preparation

Step 1

  • Preheat oven to 400 F.

  • Mash bananas.

  • Grease muffin cups or place 12 paper muffin cups in muffin pan if using.

Step 2

  • Mix first 5 dry ingredients together.

Step 3

  • In a separate bowl, whisk oil, sugar and eggs together.

Step 4

  • Add mashed bananas to egg mixture. Stir well.

Step 5

  • Add dry ingredients to wet while stirring with the whisk. Stir in chocolate chips and walnuts if desired.

Step 6

  • Divide among the 12 muffin cups.

Step 7

  • Bake at 400 F for 18-22 minutes.
