Vegan Banana Muffins (Stone Ground Flour)

Makes: 12 Muffins

Ingredients

1 cup whole wheat flour

3/4 cups all-purpose white flour

1/4 teaspoon allspice

1/4 teaspoon salt

1 teaspoon cinnamon

1 teaspoon baking soda

1 teaspoon baking powder


1/3 cup oil

3/4 cup brown sugar


3 organic bananas, mashed


1/2 cup vegan chocolate chips (optional)

1/2 cup walnuts (optional)


Preparation

Step 1

  • Heat oven to 400 degrees Fahrenheit

  • Mix first 6 ingredients together

Step 2

  • Mix together oil, brown sugar, mashed banana, chocolate chips and nuts.

Step 3

  • Gradually add dry ingredients while stirring wet ingredients.

Step 4

  • Put into greased muffin tin, or un-greased paper muffin cups.

Step 5

  • Bake for 20-25 minutes. When inserted toothpick comes out clean, muffins are done.
