Over-night Yeast Hotcakes (Stone Ground Flour)

Makes: 10 - 8" hotcakes

Ingredients

4 eggs

2 cups milk

1 1/2 teaspoon salt

1 Tablespoon sugar

1/4 cup melted butter

3 teaspoons quick-rise instant yeast

3 1/2 cups flour


Preparation

Step 1

  • Whisk eggs, add milk, salt, sugar, and melted butter. Add 2 cups flour. Stir. Add yeast and the rest of the flour (1 1/2 cups), stir well.

Step 2

  • Put in fridge. Let set overnight.

Step 3

  • In morning take out of fridge. DO NOT STIR! Let set (about 5-10 minutes) while heating an electric skillet (375 F) or fry pan (medium low). When pan is hot, add butter and scoop out just enough batter needed. The ladle can be left in the batter, but try not to move it any more than necessary. Moving the batter will deflate it and cause flatter, not nicely raised, hotcakes.
