Apple Oat Whole Wheat Muffins (Stone Ground Flour)

Makes: 12 Muffins

Ingredients

2 cups whole wheat flour

1/2 cup quick rolled oats

1 teaspoon salt

1/4 teaspoon nutmeg

1/8 teaspoon allspice

1 1/2 teaspoon cinnamon

1/2 teaspoon baking soda

2 teaspoons baking powder


1/2 cup oil

2 eggs

3/4 cup coconut palm sugar

1 teaspoon vanilla

1 cup applesauce

1/2 cup buttermilk or (2 teaspoons vinegar mixed with 1/2 cup milk)


1 grated apple, with or without the peel


Topping:

1 Tablespoon butter

2 Tablespoons coconut palm sugar

1 teaspoon cinnamon

pinch of salt

1 Tablespoon flour

2 Tablespoons rolled oats


Preparation

Step 1

  • Mix the ingredients for the topping together.

Step 2

  • Preheat oven to 400 degrees Fahrenheit.

  • Prepare buttermilk if needed. Peel, core, and grate the apple with a cheese grater.

Step 3

  • Mix first 8 dry ingredients together in a bowl.

Step 4

  • Whisk oil, eggs, and sugar together. Add vanilla, applesauce, and buttermilk.

Step 5

  • Slowly pour the dry ingredients into the wet mixture while stirring with a large spoon . When almost mixed, add the grated apples.

Step 6

  • Put batter into greased muffin cups or paper liners.

Step 7

  • Divide the topping mixture among the 12 muffins.

Step 8

  • Bake for 20-23 minutes.
