Almond Cherry Biscotti (Stone Ground Flour)

Ingredients

3 1/4 cups flour

1 teaspoon salt

1 Tablespoon baking powder


1/2 cup oil or butter

3/4 cup sugar

3 eggs

1 teaspoon almond oil

1 teaspoon vanilla


1/2 cup sliced almonds

1/2 cup dried cherries

Preparation

Step 1

  • Preheat oven to 350F. Put parchment paper on a cookie sheet.

Step 2

  • Mix flour, salt, and baking powder together with a spoon.

Step 3

  • Using a whisk, stir oil, sugar, eggs, and flavorings together.

Step 4

  • Add dry ingredients to egg mixture with a spoon. Fold in almonds and dried cherries.

Step 5

  • Divide dough in 1/2. Use a spoon to drop spoonfuls of the dough into 2 logs along the parchment lined cookie sheet. Finish shaping the logs with your fingers.

Step 6

  • Bake @ 350F for 30 minutes.

Step 7

  • Take out of oven and cool on rack 10 minutes.

Step 8

  • Slice diagonally into 1/2" slices.

Step 9

  • Lay out on the parchment paper and bake again in 350F oven 10 minutes on each side.
